Traeger Smoked Baked Beans with Bacon

Ingredients:
Six slices of bacon, diced
One medium onion, finely chopped
Two cans (28 ounces each) of baked beans (your preferred flavour)
1/4 cup ketchup
1/4 cup molasses
Two tablespoons brown sugar
Two tablespoons Dijon mustard
One tablespoon apple cider vinegar
One teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for a bit of heat)
1/4 cup BBQ sauce (your favourite brand)
1/4 cup water One teaspoon olive oil
Directions:
Preheat your Traeger smoker to 250°F (120°C) following the manufacturer’s instructions. In a large cast-iron skillet or oven-safe dish, cook the diced bacon over medium heat until it becomes crispy.
Remove the bacon with a slotted spoon and set it aside, leaving the bacon grease in the skillet. Add the finely chopped onion to the skillet with the bacon grease and cook until the onion becomes translucent and soft.
In a separate bowl, combine the baked beans, ketchup, molasses, brown sugar, Dijon mustard, apple cider vinegar, Worcestershire sauce, garlic powder, black pepper, and cayenne pepper (if using).
Mix everything until well combined. Add the bean mixture to the skillet with the cooked onions and bacon. Stir to combine all the ingredients.
Stir in the BBQ sauce and water the bean mixture, ensuring everything is evenly distributed.
Place the skillet in the preheated Traeger smoker and cook at 250°F (120°C) for about 2 hours or until the beans are hot and bubbly and the flavours have melded together.
Once cooked, remove the skillet from the smoker, and let it cool slightly before serving.
