Ingredients:

1 pound (450g) beef sirloin, thinly sliced into strips

1/2 cup soy sauce

1/4 cup mirin

Two tablespoons brown sugar

Two cloves garlic, minced

One teaspoon grated fresh ginger

One tablespoon sesame oil

One tablespoon vegetable oil

One red bell pepper, cut into chunks

One green bell pepper, cut into chunks

One red onion, cut into wedges

Wooden skewers, soaked in water for 30 minutes

 

Directions:

In a bowl, combine the soy sauce, mirin, brown sugar, minced garlic, grated ginger, sesame oil, and vegetable oil.

Mix well to create the teriyaki marinade. Place the sliced beef strips into the marinade and ensure they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, preferably overnight, for the flavours to develop.

Prepare your smoker for cooking at medium-high heat (around 250-275°F or 120-135°C). If you don’t have a smoker, you can use a grill with a smoker box or add some wood chips to the charcoal.

While the smoker is preheating, thread the marinated beef strips, bell pepper chunks, and onion wedges onto the soaked wooden skewers, alternating between them.

Place the skewers on the smoker grates and smoke for about 10-15 minutes or until the beef is cooked to your desired level of doneness. Rotate the skewers occasionally for even cooking and baste them with the remaining marinade.

Once the beef is cooked, remove the skewers from the smoker and let them rest for a few minutes before serving.

Serve the Smoked Teriyaki Beef Skewers with steamed rice and some extra teriyaki sauce on the side for dipping.
