Smoked Sausage and Potato Foil Packets

Ingredients:
1 lb smoked sausage, sliced into 1/2-inch rounds
Four medium potatoes, washed and diced
One large onion, thinly sliced
One red bell pepper, cut into strips
One green bell pepper, cut into strips
Two cloves garlic, minced
Two tablespoons of olive oil
One teaspoon paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley for garnish
Directions:
Preheat your oven to 425°F (220°C). In a large bowl, combine the sliced smoked sausage, diced potatoes, sliced onion, bell pepper strips, minced garlic, olive oil, paprika, dried thyme, dried oregano, salt, and black pepper.
Toss everything together until the ingredients are evenly coated with the seasonings. Tear off four large pieces of heavy-duty aluminium foil, each about 12 inches long.
Divide the sausage and potato mixture equally among the foil pieces, placing them in the centre of each foil. Fold the foil over the sausage and potato mixture, creating a packet, and tightly seal the edges to prevent leaks.
Place the foil packets on a baking sheet and transfer them to the oven. Bake for approximately 25-30 minutes or until the potatoes are tender and the sausage is fully cooked. Carefully remove the foil packets from the oven and let them cool slightly before opening.
Garnish with fresh parsley and serve the hot smoked sausage and potato foil packets.
