Ingredients:

4 pounds of beef short ribs, bone-in

2 tablespoons olive oil

One tablespoon smoked paprika

One tablespoon garlic powder

One tablespoon onion powder

One teaspoon black pepper

One teaspoon salt

1 cup red wine

1 cup beef broth

Two tablespoons tomato paste

Two cloves garlic, minced

One onion, finely chopped

Two tablespoons all-purpose flour

Fresh parsley for garnish

 

Directions:

Preheat your smoker to 225°F (107°C). Meanwhile, prepare the beef short ribs by patting them dry with paper towels.

Mix the smoked paprika, garlic powder, onion powder, black pepper, and salt in a small bowl to create a dry rub. Generously coat the short ribs with a dry rub on all sides. Place the seasoned short ribs in the smoker and smoke for about 3 hours until they develop a nice smoky flavour and bark on the outside. While the ribs are smoking, heat the olive oil in a large saucepan over medium heat. Add the minced garlic, chopped onion, and sauté until they become soft and fragrant.

Stir in the tomato paste and cook for another 2 minutes to release its flavours. Pour the red wine and beef broth, and bring the mixture to a simmer. Reduce the heat to low and let the sauce cook and thicken for about 20-25 minutes. Season with salt and pepper to taste.

In a small bowl, mix the all-purpose flour with a few tablespoons of water to create a slurry. Slowly whisk the slurry into the red wine sauce to further thicken it. Keep the sauce warm on low heat until the ribs are ready.

After the initial 3 hours of smoking, remove the ribs from the smoker and transfer them to a large baking dish. Pour the prepared red wine sauce over the ribs, ensuring they are evenly coated.

Cover the baking dish with foil and return it to the smoker. Continue smoking the ribs for an additional 1 hour or until they are tender and fully cooked. Once the ribs are done, take them out of the smoker and let them rest for a few minutes before serving.

Garnish with fresh parsley and serve the delicious smoked beef short ribs with red wine sauce alongside your favourite side dishes.
