Ingredients:

Two cans (20 oz each) of young green jackfruit in water or brine, drained and rinsed

One tablespoon vegetable oil

One small onion, finely chopped

Three cloves garlic, minced

1/2 cup barbecue sauce (choose your favourite)

Two tablespoons tomato paste

One tablespoon brown sugar

One tablespoon apple cider vinegar

One teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon chilli powder

Salt and pepper to taste

Four hamburger buns or slider buns

Coleslaw (optional for serving)

 

Directions:

Rinse the jackfruit under cold water and drain it. Pat the jackfruit pieces dry using paper towels to remove excess water. In a large skillet, heat vegetable oil over medium heat. Add chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.

Add the drained jackfruit to the skillet, and using a fork, break it apart into smaller shreds resembling pulled pork.

In a small bowl, whisk together barbecue sauce, tomato paste, brown sugar, apple cider vinegar, smoked paprika, ground cumin, chilli powder, salt, and pepper. Pour the sauce mixture over the jackfruit, stirring well to coat.

Reduce the heat to low, cover the skillet, and let the jackfruit simmer for about 20-25 minutes, occasionally stirring, until it becomes tender and the flavours meld together.

While the jackfruit is simmering, prepare the coleslaw if you’re using it as a topping.

Once the jackfruit is tender and cooked, use a fork to further shred it until it resembles pulled pork. Adjust seasoning if needed. Toast the hamburger buns or slider buns lightly.

Assemble the pulled jackfruit on the buns and top with coleslaw if desired. Serve hot, and enjoy!
