Smoked BBQ Chicken Pizza

Ingredients:
One pizza dough (store-bought or homemade)
1 cup cooked and shredded chicken
1/2 cup smoky BBQ sauce
1 cup shredded mozzarella cheese
1/4 cup red onion, thinly sliced
1/4 cup bell peppers (green, red, or yellow), thinly sliced
Two tablespoons fresh cilantro, chopped
Olive oil for brushing the crust
Cornmeal or flour for dusting
Directions:
Preheat your smoker or grill to 425°F (218°C). If using a grill, set it up for indirect cooking. Roll out the pizza dough on a floured surface to your desired thickness.
Transfer the dough to a pizza peel or a baking sheet dusted with cornmeal or flour. Brush the surface of the dough with olive oil to prevent it from getting soggy when adding the toppings.
Spread the smoky BBQ sauce evenly over the pizza dough, leaving a small border around the edges of the crust. Sprinkle the shredded mozzarella cheese over the BBQ sauce. Add the shredded chicken, sliced red onion, and sliced bell peppers on top of the cheese.
Carefully transfer the pizza from the peel or baking sheet to the preheated smoker or grill. If using a grill, place the pizza on the indirect heat side. Close the lid and cook the pizza for about 15-20 minutes or until the crust is golden brown and the cheese is melted and bubbly.
Once the pizza is cooked, remove it from the smoker or grill using a pizza peel or tongs. Sprinkle chopped fresh cilantro over the hot pizza for a burst of flavour.
Let the pizza cool slightly before slicing and serving.
