Orange Ginger Grilled Salmon

Ingredients:
Four salmon fillets (about 6 ounces each)
1/4 cup freshly squeezed orange juice
Two tablespoons soy sauce
Two tablespoons honey
One tablespoon grated fresh ginger
Two cloves garlic, minced
One tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
One tablespoon chopped fresh parsley (for garnish)
Orange slices (for garnish)
Directions:
In a bowl, whisk together the orange juice, soy sauce, honey, grated ginger, minced garlic, olive oil, salt, and black pepper to create the marinade.
Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is coated evenly. Cover the dish or seal the bag and let the salmon marinate in the refrigerator for at least 30 minutes, allowing the flavours to infuse.
Preheat your grill to medium-high heat. Remove the marinated salmon from the refrigerator and let it sit at room temperature for a few minutes while the grill is heating up. Lightly oil the grill grates to prevent sticking. Place the salmon fillets on the grill, skin-side down. Discard the marinade. Grill the salmon for about 4-5 minutes per side or until the fish flakes easily with a fork and has beautiful grill marks.
Once the salmon is done, remove it from the grill and transfer it to a serving platter. Garnish the grilled salmon with chopped fresh parsley and orange slices for an extra burst of colour and flavour.
