Ingredients:

4 tilapia fillets

2 lemons (1 for juice and zest, 1 sliced for garnish)

Three cloves garlic, minced

Two tablespoons fresh parsley, chopped

One tablespoon fresh thyme leaves

1/4 cup olive oil

Salt and pepper to taste

 

Directions:

In a small bowl, whisk together the juice and zest of one lemon, minced garlic, chopped parsley, thyme leaves, olive oil, salt, and pepper to create the marinade. Place the tilapia fillets in a shallow dish and pour the marinade over them.

Make sure the fillets are evenly coated. Cover the dish and refrigerate for at least 30 minutes to allow the flavours to meld. Preheat the grill to medium-high heat.

Remove the marinated tilapia fillets from the refrigerator and let them sit at room temperature for a few minutes. Grease the grill grates to prevent sticking. Place the tilapia fillets on the grill and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.

While grilling, you can add a few lemon slices to the grill for garnish and extra flavour.

Once cooked, remove the tilapia fillets from the grill and serve hot with the grilled lemon slices.
