Hawaiian BBQ Grilled Shrimp

Ingredients:
1 pound large shrimp, peeled and deveined
1 cup pineapple chunks
One red bell pepper, cut into chunks
One green bell pepper, cut into chunks
One red onion, cut into chunks
1/2 cup BBQ sauce
Two tablespoons of soy sauce
Two tablespoons olive oil
Two cloves garlic, minced
One teaspoon ginger, grated
Salt and pepper to taste
Wooden skewers soaked in water
Directions:
In a large bowl, combine the BBQ sauce, soy sauce, olive oil, minced garlic, grated ginger, salt, and pepper.
Mix well to create the marinade. Add the peeled and deveined shrimp to the marinade and toss until they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to marinate.
Preheat the grill to medium-high heat. Thread the marinated shrimp, pineapple chunks, red bell pepper, green bell pepper, and red onion onto the soaked wooden skewers, alternating the ingredients for a colourful presentation.
Place the assembled skewers on the preheated grill and cook for about 2-3 minutes per side or until the shrimp turns pink and slightly charred. Baste the skewers with the remaining marinade while grilling to add extra flavour.
Once the shrimp is cooked, remove the skewers from the grill and serve immediately.
