Preparation Time: 15 minutes

Cooking Time: 15 minutes

Serving: 4 servings

Four boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

8 oz fresh mozzarella cheese, sliced

1/4 cup basil pesto

Two tablespoons balsamic glaze

Two tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper on both sides. Mix the olive oil and basil pesto in a small bowl to make a marinade. Brush the chicken breasts with the pesto marinade, ensuring they are evenly coated.

Place the chicken on the grill and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. While the chicken is grilling, prepare the Caprese salad topping.

In a separate bowl, combine the halved cherry tomatoes with the sliced mozzarella. Drizzle the balsamic glaze over the Caprese salad and gently toss to coat the tomatoes and mozzarella. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.

To assemble, place the grilled chicken breasts on a serving platter. Top each chicken breast with a generous amount of the Caprese salad mixture. Garnish with fresh basil leaves.
