Grilled Cilantro Lime Chicken

Ingredients:
Four boneless, skinless chicken breasts
1/4 cup fresh cilantro, chopped
Three cloves garlic, minced
1/4 cup lime juice
Two tablespoons of olive oil
One teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
Directions:
In a large mixing bowl, combine the chopped cilantro, minced garlic, lime juice, olive oil, cumin, paprika, salt, and pepper.
Stir well to create the marinade. Add the chicken breasts to the marinade and ensure they are fully coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, preferably overnight, for maximum flavour.
Preheat the grill to medium-high heat. Remove the marinated chicken breasts from the bowl and let any excess marinade drip off. Grill the chicken breasts for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the centre.
Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
