Grilled Cajun Shrimp Po’Boy Sandwiches

Ingredients:
1 pound large shrimp, peeled and deveined
Two tablespoons olive oil
Two teaspoons Cajun seasoning
One teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
4 French baguettes or sub rolls
1/4 cup mayonnaise
Two tablespoons hot sauce (adjust to taste)
Lettuce leaves
Sliced tomatoes
Sliced pickles
Lemon wedges for serving
Directions:
In a bowl, combine the shrimp, olive oil, Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
Toss well to coat the shrimp evenly. Let it marinate for 10 minutes.
Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers or use a grilling basket to prevent them from falling through the grates. Grill the shrimp for about 2-3 minutes per side or until they turn pink and slightly charred.
Remove from the grill and set aside. Cut the French baguettes or sub rolls in half lengthwise. Toast them on the grill for a minute or two until they get a nice crust.
Mix the mayonnaise and hot sauce in a small bowl to make the spicy mayo spread. Spread the spicy mayo on both sides of the toasted baguettes to assemble the sandwiches. Add a layer of lettuce leaves, sliced tomatoes, and pickles.
Now, place a generous amount of the grilled Cajun shrimp on top of the veggies.
Serve the Grilled Cajun Shrimp Po’ Boy Sandwiches with lemon wedges on the side for extra flavour.
