One bone-in turkey breast (about 4-5 pounds)

Two tablespoons olive oil

2 tablespoons applewood smoked sea salt

One tablespoon black pepper

1 tablespoon dried thyme

One tablespoon garlic powder

One tablespoon onion powder

One teaspoon paprika



Preheat your smoker to 225°F (107°C) according to the manufacturer’s instructions. In a small bowl, mix the olive oil, applewood smoked sea salt, black pepper, dried thyme, garlic powder, onion powder, and paprika to create the rub for the turkey.

Pat the turkey breast dry with paper towels. Place it on a clean surface, and generously rub the prepared spice mixture all over the turkey, making sure to get it under the skin as well. Once the smoker is ready, place the seasoned turkey breast directly on the smoker rack.

Smoke the turkey at 225°F (107°C) for approximately 3 hours or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer. Once the turkey is cooked, remove it from the smoker and let it rest for about 15 minutes before carving.

Slice the Applewood Smoked Turkey Breast and serve it warm.
